CARROT CAKE 
1 1/2 c. oil
3 c. flour, all-purpose
1 tsp. salt
2 tsp. baking soda
3 tsp. cinnamon
2 c. sugar
1 c. chopped nuts
2 c. grated carrots

Grease tube pan and mix all ingredients and bake at 335 degrees for 1 hour. Cool and glaze with Caramel Glaze.

CARAMEL GLAZE:

1 stick butter
1 c. sugar
1/2 c. brown sugar
1/2 c. milk
1 tsp. rum or vanilla flavoring

Cook until thick, spread over cooled cake. Serves 10.
