GREEN PEPPER STEAK 
1 lb. beef chuck or round
1/4 c. soy sauce
1 clove garlic
1/4 c. salad oil
1 c. green onion
1 c. green peppers
1 tbsp. cornstarch
1 c. water
2 tomatoes, diced

Preparation 20 minutes.

1. Cut beef into thin strips 1/8" thick.

2. Combine soy sauce, garlic, and add beef; set aside.

3. Heat oil; add beef, cook high until browned. Simmer 30 minutes on low heat.

4. Add peppers and cook medium until tender.

5. Mix cornstarch with water. Add to pan, cook until thickens.

6. Add tomatoes and heat. Good served with rice. Cook 30 to 40 minutes.
