FLOUNDER CASSEROLE 
3 lb. fresh flounder
1/4 lb. mushrooms, chopped
1/2 c. sherry
1/4 c. butter
4 tbsp. flour
1 c. light cream
1 c. milk, as needed
1 onion, chopped
Old Bay seasoning
Paprika
1/3 lb. Jarlsberg or Swiss cheese
3 tomatoes
Lawry's salt

Salt one side of flounder pieces with Lawry's salt. Roll up. Place in two rows in a long baking dish. In between and on ends put slices of tomatoes and cheese.

Saute mushrooms and onions. Make a cream sauce with butter, flour, sherry, cream and milk. Add Old Bay, paprika, salt and pepper to taste. Stir in mushrooms and onions. Pour over fish. Bake at 350 degrees for 45 minutes, until brown and bubbly.
