PUMPKIN DROP COOKIES | |
1 tsp. vanilla 1/2 c. butter 1 1/2 c. sugar 1 egg 1 c. cooked or canned pumpkin 2 1/2 c. all purpose flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1 tsp. nutmeg 1 tsp. cinnamon Nuts (opt.) Cream butter and sugar until light and fluffy. Beat in egg, pumpkin and vanilla. Mix and sift flour, baking powder, baking soda, salt, nutmeg and cinnamon. Add to creamed mixture; mix well. Add nuts if desired, mix thoroughly. Drop dough by teaspoons onto well greased cookie sheets. Bake at 350 degrees for 15 minutes or until lightly browned. Remove from cookie sheets while still warm; cool on racks. Makes about 6 dozen. You can also just make a sheet cake out of this same recipe. Just put the dough on a well greased cookie sheet, spread it out all over and then bake 15 to 20 minutes, until lightly browned. Then take: 1/2 tsp. vanilla 1, 2 or 3 tsp. water, added 1 at a time Mix all together and pour on top of bar when it comes out of the oven and let set, it's ready to eat. |
