SNOWBALLS 
3/4 c. sifted confectioners' sugar
2/3 c. coarsely chopped pecans
1 egg white
1/4 tsp. pure vanilla extract

1. Place confectioners' sugar and nuts in a food processor fitted with a metal blade. Blend for 30 seconds, or until the nuts are ground. Place the mixture in a bowl.

2. Add the egg white and vanilla to the nuts and stir with a spatula to form a paste.

3. Roll teaspoonfuls of the dough by hand into balls and place the balls on an ungreased cookie sheet. Bake in a preheated 325 degree oven for 20 minutes.

4. Remove from the pan and cool on a wire rack. Makes 12 cookies.
