JUDY'S PECAN BUTTERMILK MUFFINS | |
2 cups sifted cake flour 1 tsp. baking powder 1/2 tsp. salt 2 tbsp. sugar 1/2 cup chopped pecans 1 cup buttermilk 3 tbsp. melted butter 1 egg, beaten 1/2 tsp. baking soda Sift together dry ingredients. Combine buttermilk, butter and egg. Add milk mixture all at once to dry ingredients. Add pecans and mix only enough to combine. Mixture will be lumpy. Fill well greased muffin pan 2/3 full. Bake at 400°F for 25 minutes. Makes one dozen. |
