STEAK AND PEPPERS 
2 lbs. skirt or sirloin steak, cut into chunks
1/2 c. olive oil or butter
1 sm. clove garlic
1/2 c. chopped onions
1 tsp. oregano
1 tsp. chopped parsley
1 lb. fresh mushrooms
2 tomatoes, cut in 1/4 wedges, or 1 can tomato sauce
2 med. green peppers, cut in strips
1 c. sherry cooking wine or 1/4 c. red wine
Salt and pepper to taste

Brown meat in olive oil or butter; add mushrooms and garlic, onions and parsley. Simmer for about 5 minutes. Add rest of the ingredients and cover. Let cook slowly until meat is tender, usually about 1/2 hour. Serve over rice.
