CURRIED CORN WITH RED PEPPER 
4 ears corn
1 med. sweet red pepper, cut into bite-sized pieces
2 tbsp. butter
1/4 c. finely chopped onion
1 tsp. minced garlic
1 tsp. curry powder
Salt & pepper
1/4 c. plain yogurt

Cook corn in boiling water for just 4 minutes, then cut corn off cob. Heat butter in skillet. Add red pepper, onion and garlic. Cook 2 minutes. Sprinkle with curry powder. Add corn, salt, pepper and yogurt. Stir 2 minutes. Serve hot.
