SWEET POTATO PIE 
Pastry dough for 9-inch tart
2 c. mashed cooked sweet potatoes
2 eggs, well beaten
1 1/4 c. milk
3/4 c. sugar
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 tbsp. rum
4 tbsp. melted butter

Preheat the oven to 425 degrees. Line a 9-inch pie pan with the pastry dough. Combine the remaining ingredients in a large bowl and beat until smooth. Pour into lined pan. Bake for 10 minutes. Then reduce heat to 300 degrees and bake for about 50 minutes or until the filling is firm.
