FRESH APPLE CRUNCH CAKE 
2 c. flour
2 c. sugar
2 c. fresh apples, sliced
1 c. chopped nuts
1/3 c. buttermilk
2 eggs
1 1/2 tsp. salt
1 tsp. nutmeg
1 tsp. cinnamon
1 tsp. baking soda
1 1/4 c. oil
1 tsp. vanilla

Stir dry ingredients together. Mix oil, eggs, and sugar. Add flour mixture to oil mixture and mix well. Add apples, nuts, vanilla, and buttermilk; mix together. Batter will be very stiff, like a cookie dough. Pour into a greased tube pan. Bake at 350 degrees for 1 hour and 15 minutes. The crust is crunchy like a cookie and the inside is moist and chewy.
