PUMPKIN BREAD 
3 1/2 c. flour
1 1/2 c. sugar
2 tbsp. pumpkin pie spice
2 tsp. baking soda
1 1/2 tsp. salt
1 1/2 c. brown sugar
4 eggs, beaten
2/3 c. water
1 c. oil
1 can pumpkin (2 c.)
1 (9 oz.) dry mince meat
1 c. chopped nuts

Sift flour, sugar, spices, soda and salt. Mix in brown sugar. Add eggs, water, oil and pumpkin. Beat at low speed 3 minutes. Break up mince meat and add. Add nuts. Pour in pans. Bake at 350 degrees for 50 to 60 minutes or done.

Makes 4 coffee cans or I use 7 loaf pans, 5 11/16" x 3 1/4" x 2".
