CRANBERRY - ORANGE RELISH | |
4 c. fresh cranberries 2 oranges, peeled, seeded & chopped 1 1/2 c. sugar 1 lg. apple unpeeled, cored & diced 1/2 c. currants 1/2 c. chopped pecans 2 tbsp. Grand Marnier or other orange flavored liqueur 2 tbsp. vinegar 1/4 tsp. ginger 1/4 tsp. cinnamon Combine cranberries, oranges, apple, sugar, currants, nuts, liqueur, vinegar, ginger and cinnamon in a 3 quart casserole; stir well. Cover with waxed paper and microwave at high for 14-15 minutes or until cranberry skins pop, stirring every 4 minutes. Ladle relish into hot sterilized jars, leaving 1/4 inch headspace. Cover with metal lids and screw on bands. Let stand at room temperature until cool. Store in refrigerator up to 3 weeks. Makes 2 1/2 pints. |
