COLORFUL RICE SALAD 
1 (10 oz.) pkg. frozen English peas
3 c. cooked rice
1 (4 oz.) jar diced pimientos
1 c. diced, cooked ham
6 green onions, sliced
4 hard cooked eggs, chopped
3/4 c. sliced pimiento stuffed olives
1/2 c. chopped celery
1/3 c. sweet pickle relish
2 c. (8 oz.) shredded cheddar cheese
1/4 c. salad dressing or mayonnaise
Cherry tomatoes (opt.)

Cook peas according to package directions. Drain and cool. Combine peas and next 9 ingredients; stir well. Add salad dressing, tossing until well mixed. Chill thoroughly. Spoon salad onto serving platter and garnish with cherry tomatoes, if desired.
