CHOCOLATE MINT COOKIES 
1/2 c. butter
1 sq. unsweetened chocolate
1/2 c. granulated sugar
1 tsp. plus 1 tbsp. creme de menthe
1 egg, beaten
2 c. graham crackers, crushed
1 c. coconut
1/2 c. chopped nuts
2 c. confectioners' sugar, sifted
3 sqs. unsweetened chocolate, melted

Mix melted 1/4 cup butter and one square chocolate together. Blend in sugar, 1 teaspoon creme de menthe, egg, graham cracker crumbs, coconut, and nuts. With hands, press into 11 x 7 1/2 x 1 1/2 inch cookie sheet. Refrigerate. Mix 1 tablespoons creme de menthe with 1/4 cup butter and confectioners' sugar. Spread over refrigerated mixture. Melt 3 ounces unsweetened chocolate and spread over top. Cut in bars or squares.
