PORK ROLLS IN SPINACH SAUCE 
2 bacon slices
1 1/2 lean ground pork
8 crumbled soda biscuits
Salt and pepper
1 egg, beaten
1/2 c. milk
Flour

SPINACH SAUCE:

Salt and pepper
1 1/2 c. cream
1/4 c. spinach, stemmed and blanched
1/2 c. chopped garlic

Preheat oven to 350 degrees. Chop bacon. Add ground pork and soda biscuits and season with salt and pepper. Stir in beaten egg and milk. Roll mixture in flour and shape into rolls. Place rolls in a baking dish and bake for 15 minutes. Then cover and cook for 30 minutes longer.

"Spinach Sauce": in saucepan mix together all sauce ingredients and bring to a boil. Let mixture reduce 1/3. Then run sauce through a blender and serve with pork rolls.
