BAKED RUM FRUIT | |
1 (1 lb. 4 oz.) can cling peach halves, drained and quartered 1 (1 lb. 4 oz.) can pineapple chunks, drained 1 (1 lb. 1 oz.) can dark, sweet pitted cherries, drained 1 (1 lb. 1 oz.) can unpeeled apricot halves, reserve liquid 1 c. brown sugar, packed 1 c. light rum Preheat oven to 350 degrees. Combine fruits and apricot liquid in shallow 3 quart baking dish. Sprinkle with brown sugar and pour rum over fruit. Bake for 1 1/2 hours, uncovered, stirring once. Serve warm or cold. Good accompaniment with meat. |
