EGGPLANT CHICKEN ZUCCHINI 
Place 1 peeled, sliced eggplant and 1 or 2 sliced zucchini in baking dish. Add onion, green pepper, fresh tomato slices, 1 clove garlic, chopped and 1 cup chicken stock. Cut up 1 fryer, salt and pepper to taste. Place fryer on rack over baking dish. Bake 1 hour in 350 degree oven or until done.
