DIABETIC CAKE 
1 c. water
1 c. applesauce
2 eggs
1 tsp. baking soda
3/4 c. oil
1 tsp. cinnamon
1 c. raisins
2 tbsp. Sweet 10*
2 c. flour
1/2 c. pecans
1 tsp. vanilla
1/4 tsp. cloves

Combine water and raisins and boil until water is absorbed. Combine other ingredients and mix until smooth. Add raisins and pecans.

Bake in 12 x 7-inch pan at 350°F for 30 minutes.

Note: Buy unsweetened applesauce.

*Sweet 10 is an artificial sweetener. You may substitute an equivalent amount of any other artificial sweetener.
