SKI STEW 
2 lbs. beef (1 1/2-inch cubes)
1 onion, sliced
1 stalk celery, in chunks
2 tsp. salt
1 tbsp. sugar
2 tbsp. instant tapioca
1/2 c. V-8 juice
2-3 potatoes, peeled and cut in large cubes

Layer ingredients in order given in 7 x 11 x 1 1/2-inch pan. Cover tightly with foil. Bake at 250 degrees for 4 hours.
