STUFFED GREEN PEPPERS 
6 green peppers
1/2 lb. ground chuck or ground beef
1 sm. onion
3 ripe tomatoes, peeled and chopped
1/2 c. fresh corn, or canned or frozen
1 sm. potato, chopped
Bread crumbs
Salt and pepper to taste

Brown meat. Add onion, tomatoes, corn, potato, salt and pepper. Cook slowly until vegetables are done. Cut peppers in half, remove the seeds and membrane.

Cook the peppers in boiling salted water 4 minutes and drain. Spoon meat and vegetable mixture into the peppers. Sprinkle bread crumbs on the tops of the peppers. Place the filled peppers in a shallow baking dish with a small amount of water in the bottom of the dish. Bake at 350 degrees for about 25 minutes.
