CHOW MEIN 
1 lb. meat (raw or cooked) cut in thin slices
3 c. celery, sliced diagonally
2 c. onions, sliced lengthwise
3/4 c. mushrooms (fresh or canned and drained)
3 c. fresh or 1 can drained bean sprouts

SAUCE:

1/4 tsp. ground ginger
1 tsp. sugar
3 tbsp. corn starch
5 tbsp. soy sauce
3/4 c. stock or bouillon

Heat 1 tablespoon oil in large skillet and stir fry meat just until done. In another skillet and with another tablespoon of oil stir fry each vegetable until done. Add each one to meat mixture until everything is in large skillet.

Mix 5 ingredients of sauce and pour over vegetable mixture in large skillet. Cook until sauce thickens and clears. Serve over rice. Can also add 1 can bamboo shoots, some chop suey vegetables, canned for bulk. Also good made with shrimp.
