CHOCOLATE POT DE CREME 
12 oz. dark sweet chocolate
1 1/2 c. strong coffee
2 tbsp. sugar
Lg. pinch of salt
2 eggs
2 tsp. vanilla extract

Using a double boiler, melt chocolate in 1/2 cup coffee. Let chocolate cool while combining sugar, eggs and vanilla in blender. Bring rest of coffee (1 cup) to boil and add it to ingredients in blender. Add melted chocolate, cover and blend for one minute. Pour into 8 pot de creme cups and chill in refrigerator until time to serve.
