SAUSAGE BALLS 
24 oz. turkey breakfast sausage
6 tbsp. grated Parmesan cheese
2 slices bread made into crumbs
2 tbsp. dried parsley flakes
2 eggs (or egg substitute to equal 2 eggs)
1/2 tsp. ground red pepper
1/2 c. each finely diced celery & onions

Mix all ingredients together until well blended. Form into individual balls (approximately 1/2 tablespoon each). Place balls on cookie sheet sprayed with Pam. Freeze. To cook, place balls in 350 degree oven for 12 minutes, then broil for 2 minutes to brown. Yields approximately 64 sausage balls.
