MEXICAN LASAGNE 
1 lb. ground beef
16 oz. can tomatoes, chopped
1 pkg. taco seasoning
1 sm. can French fried onions
12 oz. cottage cheese
1 1/2 c. shredded cheese, cheddar
2 eggs, beaten
12 sm. flour tortillas

Brown and drain ground beef. Add tomatoes, undrained, taco seasoning and 1/2 can onions. Mix together cottage cheese, 1 cup shredded cheese and eggs. In greased pan layer 3 tortillas, 1/4 of meat mixture and 1/4 cheese mixture. Repeat 3 times. Sprinkle remaining onions and cheese on top. Cover and bake at 350 degrees for 45 minutes. Uncover and bake 5 minutes more. Garnish with shredded lettuce and tomatoes and serve.
