CURRIED SEAFOOD 
1 1/3 c. minute rice, cooked
1/2 tsp. salt
1 1/8 c. boiling water for the rice
3/4 c. mayonnaise
1 1/2 tbsp. lemon juice
3/4 tsp. curry powder
1 tbsp. grated onion, diced
1 c. diced cooked shrimp
1 c. chopped celery

Cook rice according to directions. Cool rice. Then combine mayonnaise, lemon juice, curry powder and onions. Mix well. Add shrimp, celery and rice. Then stir all together. Make the day before serving.
