SCALLOPED CHICKEN 
1 chicken (3 to 4 lb.), cooked & boned
1 c. chicken broth
1 c. bread crumbs
2 eggs, beaten
1/2 c. milk
1/2 c. quick cook rice
1 can condensed cream of mushroom soup
1 med. bag potato chips or crackers, crushed

Mix together all ingredients, except potato chips, and press into a greased 13 x 9 x 2 baking dish. Top with chips.

Bake at 350 degrees for 40 minutes or until set.

(Can also substitute canned chicken in place of whole chicken.)
