COCONUT OATMEAL COOKIES 
2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
1 c. shortening
1 c. white sugar
1 c. brown sugar
2 eggs
1 c. quick oatmeal
1 tsp. vanilla
1 c. coconut

Cream shortening, gradually add sugars; cream again. Add eggs and vanilla. Beat. Add dry ingredients in four parts, beating after each addition. Mix in oatmeal and coconut. Drop onto cookie sheet. Bake at 375 degrees for 9-10 minutes until golden brown.
