DIET CHOCOLATE ECLAIR CAKE 
3 (3 oz.) pkgs. sugar free instant vanilla pudding
3 c. skim milk
2 tbsp. vanilla
Graham crackers
8 oz. lite Cool Whip

Mix pudding with milk; beat until thick. Add vanilla. Fold in Cool Whip. Line bottom of 13"x9"x2" dish with graham crackers. Add 1/2 of pudding. Add another layer of graham crackers, rest of pudding and a third layer of crackers. Ice with the following.

ICING:

1 c. sugar
1/8 tsp. salt
1/4 c. skim milk
1/2 c. cocoa
1 stick butter, melted
1 tsp. vanilla

Mix together in a saucepan sugar, salt, milk and cocoa. Bring to a boil, stirring constantly. Take off heat and add butter and vanilla. Let stand for 5 minutes. Pour over top of 3rd layer of crackers. Refrigerate for 6 to 8 hours before serving.
