QUICK APPLE COFFEE CAKE 
1 1/3 c. butter
1 1/4 c. sugar
3/4 c. milk
1/2 tsp. salt
2 eggs
2 c. flour
3 c. apples, peeled and sliced
3 tsp. baking powder
1 tsp. vanilla extract
1-3 tsp. cinnamon

Cream butter and 1 cup sugar until fluffy. Add eggs, baking powder, vanilla, and salt. Beat well. Add flour alternately with milk, beginning and ending with flour.

Spread batter in 2 (8-inch) round cake pans, greased and floured on the bottom. Arrange apple slices over top. Combine 1/4 cup sugar and cinnamon; sprinkle over apples.

Bake at 375 degrees for 35-40 minutes or until golden brown. Serve warm or cold. (Good served as a dessert topped with whipped cream.)
