QUICHE LORRAINE 
9 inch crust pastry
12 slices bacon (1/2 lb.) crispy fried and crumbled
1 c. shredded natural Swiss cheese (4 oz.)
1/3 c. minced onion
4 eggs
2 c. light or whipping cream
3/4 tsp. salt
1/4 tsp. sugar
1/8 tsp. cayenne red pepper

Heat oven to 425 degrees. Prepare pastry shell.

Sprinkle bacon, cheese and onion in pastry lined pan. Beat eggs slightly. Beat in remaining ingredients. Pour mixture into pie pan. bake 15 minutes; reduce oven temperature to 300 degrees. Bake 30 minutes longer.
