SWEET POTATO PIE 
3 lbs. fresh sweet potatoes
1 egg
1/2 c. butter (plus or minus)
3 tbsp. brown sugar (plus or minus)
2 flat cans crushed pineapple
Crushed corn flakes

Boil sweet potatoes in salted water. Peel and mash while hot. Moving constantly and swiftly, stir in egg. Add butter and brown sugar to your taste. Add crushed pineapple with juice. Spoon potatoes into a baking dish greased with butter. Sprinkle with additional brown sugar and crushed corn flakes. Dot with more butter. Bake at 350 degrees for 35 minutes.
