SWEDISH ROASTED POTATOES 
6 baking potatoes
1 tbsp. soft butter to butter pan
3 tbsp. butter, melted
Salt and white pepper to taste
2 tbsp. dry bread crumbs
2 tbsp. Parmesan cheese, grated

Peel potatoes; drop each in cold water to prevent discoloration. Without cutting all the way through, slice each potato at 1/4 inch intervals. (An easy way: Place potato in a deep spoon - a wooden spoon will not damage your knife - then slice as described). Keep in cold water until ready to roast. Drain, pat dry and place side by side in buttered pan (in one layer) sliced side up. Baste with half the melted butter, season liberally and bake at 425 degrees for 30 minutes. Sprinkle with bread crumbs, baste with remaining butter and continue roasting for 15 minutes or until golden brown and tender. If you use the cheese, sprinkle over potatoes 5 minutes before they are done.
