TURKEY PARMIAGIANO | |
1 lb. fresh turkey slices or turkey tenderloin, sliced 2 to 3 tbsp. olive or salad oil 2 finely minced cloves garlic 1 minced onion 1 (28 oz.) can tomatoes 1/2 to 3/4 tsp. salt 1/4 tsp. pepper 1 (8 oz.) can tomato sauce 1/4 tsp. Italian seasoning 1 egg 1/4 c. pkg. dried bread crumbs 1/4 c. Parmesan cheese 3 tbsp. olive or salad oil 1/2 to 3/4 lb. Mozzarella cheese 1/4 to 1/3 c. Parmesan cheese In 2 to 3 tablespoons hot oil in saucepan. Saute garlic and onion until golden. Add tomatoes, salt and pepper; break up tomatoes; simmer, uncovered, 10 minutes. Add tomato sauce, Italian seasoning; simmer, uncovered, 20 minutes. Beat egg well with fork. Combine crumbs, 1/4 cup Parmesan cheese. Dip each turkey slice into egg, then into crumbs; saute 3 pieces in 1 tablespoons hot oil in skillet, turning once, until golden brown on both sides. Repeat until all are done. Set slices, side by side, in 12 x 8 baking dish. Heat oven to 350 degrees. Thinly slice Mozzarella. Pour two thirds of tomato mixture over turkey. Arrange Mozzarella on top; spoon on rest of sauce. Sprinkle with 1/4 to 1/3 cup Parmesan. Bake, uncovered 30 minutes. Make 4 large servings. |
