ITALIAN BEEF AND CHEESE
CASSEROLE
 
1 (8 oz.) pkg. noodles, cooked and drained
2 lb. lean ground beef
1 tsp. salt
Pepper to taste
1 lg. onion, chopped
1 green pepper, chopped
1 c. fresh mushrooms or 1 sm. can, sliced
2 (8 oz.) cans tomato sauce
1 (8 oz.) pkg. cream cheese, softened
1/2 c. sour cream
1 1/2 c. cottage cheese
1/2 c. grated Parmesan cheese
1/2 c. shredded cheddar cheese

Brown meat lightly, add salt, pepper, onion, green pepper, and mushrooms. Cook until onion is clear. Add tomato sauce; simmer 1 minute and remove form heat. In small bowl blend cream cheese, sour cream, and cottage cheese. Set aside. In buttered 9 x 13 pan or casserole place 1/2 of the cooked noodles spoon on cheese mixture and 1/2 of Parmesan cheese. Spread remaining noodles. Pour meat sauce over all. Lift noodles over fork slightly so some of the sauce mixes with the noodles. Sprinkle remaining Parmesan cheese and top with cheddar cheese. Bake at 350 degrees for 20 minutes or until bubbly.
