ANTIPASTO ITALIAN CHICKEN | |
4 broiler or fryer pieces of chicken 1/4 c. Italian dressing, divided 4 slices fresh tomatoes 2 or 3 fresh onion rings 2 green pepper rings 1/2 tsp. salt (or less) 1/2 tsp. pepper (or less) 2 tbsp. grated Parmesan cheese 4 cut up mushrooms (optional) In 9 x 13 inch baking pan, arrange chicken pieces. Pour 1/2 of the Italian dressing evenly over chicken. On each pieces, place 1 slice of tomato, 1 onion ring, 1 piece of green pepper, and mushrooms. Pour remaining Italian dressing over chicken and vegetables. Sprinkle grated cheese on top and add salt and pepper. Place in 350 degree oven for 30 minutes. Baste with juices, use fork to check for doneness. |
