SWEET AND SOUR CHICKEN 
4 chicken breasts
1 c. flour
2 eggs
1 c. matza meal or bread crumbs
Pinch of salt

SAUCE:

1 med. can pineapple chunks
1/2 c. ketchup
4 tbsp. sugar
3 tbsp. red wine

Remove bones of chicken. Cut into small pieces. Put in paper bag with flour and salt. Shake until coated. Remove chicken from bag. Dip in eggs. Then matza meal or bread crumbs. Fry until crispy brown.

For Sauce: Mix all ingredients and simmer for 5 minutes over low heat (includes pineapple chunks and liquid). Pour sauce over chicken. Bake in pan at 400 degrees for 20 minutes. Serve with rice.
