SPINACH CHEESE SALAD 
2 (10 oz.) pkgs. chopped spinach, thawed and well drained
3 hard cooked eggs
1/4 c. chopped onion
1/4 c. chopped celery
1/4 to 1/3 lb. shredded cheddar cheese

DRESSING:

1/3 c. mayonnaise or salad dressing
1/4 tsp. Tabasco sauce
1/2 tsp. salt
2 tsp. vinegar
3 tbsp. bottled horseradish

Thaw spinach and drain well. Press out any remaining liquid. Peel and coarsely chop eggs. Add chopped celery and onions to spinach and mix lightly. Combine mayonnaise or salad dressing with seasonings. Pour over spinach mixture. Mix lightly. Cover and refrigerate at least two hours.
