POTATO SOUP 
4 med. potatoes, diced
2 lg. onions, sliced
2 ribs celery, minced
2 c. boiling water
1 tsp. salt
1 qt. hot milk
1 tbsp. butter
1 tbsp. minced parsley

Cook potatoes, onions and celery in water and salt covered over medium heat until potatoes are soft (about 20 minutes). Pour into blender and blend for 20 seconds. Add milk, reheat but do not boil. To serve, dot with butter and sprinkle with parsley. 4 servings.
