“SPICY POTATO SKINS” IS IN:

SPICY POTATO SKINS 
Pam nonstick cooking spray
1 tsp. chili powder
1/3 c. plain dry bread crumbs
1/2 tsp. salt
1/2 tsp. ground cumin
4 baking potatoes (about 8 oz. each) baked and cooled
1/4 c. low fat mayonnaise

Toppings:

low fat sour cream
low fat cheddar cheese
chopped green onion
bacon bits

Heat oven to 425°F. Coat a cookie sheet with nonstick spray. Mix bread crumbs, chili powder, cumin, and salt on wax paper. Cut potatoes in quarters lengthwise. scoop out pulp, leaving 1/4 in thick shells. Brush shells with mayonnaise, then coat in crumb mixture. Bake on cookie sheet 25 minutes. Turn over and bake 25 minutes longer or till crisp. Serve with toppings.
