SPICY POTATO SKINS | |
Pam nonstick cooking spray 1 tsp. chili powder 1/3 c. plain dry bread crumbs 1/2 tsp. salt 1/2 tsp. ground cumin 4 baking potatoes (about 8 oz. each) baked and cooled 1/4 c. low fat mayonnaise Toppings: low fat sour cream low fat cheddar cheese chopped green onion bacon bits Heat oven to 425°F. Coat a cookie sheet with nonstick spray. Mix bread crumbs, chili powder, cumin, and salt on wax paper. Cut potatoes in quarters lengthwise. scoop out pulp, leaving 1/4 in thick shells. Brush shells with mayonnaise, then coat in crumb mixture. Bake on cookie sheet 25 minutes. Turn over and bake 25 minutes longer or till crisp. Serve with toppings. Submitted by: Karen LaValley |
