CHOCOLATE REFRIGERATOR SOUFFLE
2 c. cornflakes OR 3/4 c. cornflake crumbs
2 tbsp. sugar
1/4 c. soft butter
1 env. unflavored gelatin
1 c. whipping cream OR 1 c. sugar (scant) and Cool Whip (about 2 c.)
1/8 tsp. salt
1/3 c. cocoa
1 1/2 c. milk
1 tsp. vanilla

If using cornflakes, crush into fine crumbs. Combine crumbs, sugar and butter in 8 x 8 inch pan and mix well. Press evenly and firmly in bottom of pan. CHILL.

Mix gelatin, sugar, salt and cocoa thoroughly in medium sized saucepan. Add milk and cook over low heat, stirring constantly until gelatin is dissolved and mixture is smooth. Remove from heat and stir in vanilla. Chill until mixture begins to set. Beat with rotary or electric mixer until light and fluffy. Whip cream until stiff and fold into cocoa mixture. Spread over crumb crust. Chill until firm. Cut into squares to serve. Makes 9 servings.
