SOUR CREAM CHEESECAKE 
1/2 box graham crackers, crumbled
2 tbsp. granulated sugar
1/2 lb. butter, melted
1 lb. cream cheese, softened
1 tsp. vanilla
3 eggs

Topping:

1 pt. sour cream
1/3 c. sugar
1 tsp. vanilla

Spread in spring-form pan with sides at least 2 inches high the graham crackers, sugar and melted butter. Beat by hand with wire whisk the cream cheese, vanilla and eggs. Add the eggs one at a time beating after each egg. Pour into crust and bake at 375°F for 20 minutes. Cool thoroughly.

Mix together topping ingredients, the sour cream, sugar and vanilla. Pile this on top of filled crust. Return to the oven for 10 minutes at 315°F. Cool thoroughly, chill in refrigerator. Remove spring pan before serving.
