CHICKEN TACO AND RICE 
1 lb. chicken, boiled
2 tbsp. oil
1 c. chicken broth
8 oz. tomato sauce
1 pkg. taco seasoning
1 (12 oz.) can whole kernel corn
1 med. green pepper, diced
1 1/2 c. minute rice
1 can mushrooms

Saute chicken. If boiled first, eliminate oil. Add chicken broth, tomato sauce and taco seasoning; bring to a boil, then simmer covered 5 minutes. Add corn, pepper and mushrooms; bring to a boil. Add rice; cover and take it off the heat. Let stand 5 minutes.
