SURPRISE BANANA-BRAN MUFFINS 
3 tbsp. butter
1/3 c. light brown sugar
1 c. bran cereal
2 or 3 ripe bananas, mashed (1 to 1 1/2 c.)
1 egg
1 1/2 c. all-purpose flour
1 1/2 tsp. baking powder
3/4 c. peanut butter

Preheat the oven to 350 degrees. Line 12 muffin cups with paper or foil baking cups.

Cream the butter with the sugar in a bowl. Stir in the bran cereal and the bananas. Mix in 1/4 cup very hot water. Add the egg and beat it in. Sift in the flour and the baking powder. Stir just until the dry ingredients are mixed in; do not over mix.

Drop a heaping tablespoonful of the batter into each lined cup. Drop a tablespoon of peanut butter onto the butter in each cup, using up all of the peanut butter. To cover up the peanut butter surprise, divide the remaining batter equally among the partially filled cups. Bake the Banana-Bran Muffins until they are evenly browned, 20 to 25 minutes.
