CHICKEN FRIED RICE 
1 1/2-2 lb. chicken, deboned, cut into strips

Stir fry in 2 tablespoons of oil about 10-15 minutes. Add 1 beaten egg, 1 chopped onion, 1 bell pepper (chopped). Stir fry 8-12 minutes. Add 1 can mushrooms, 1 can bean sprouts and dash of ginger. Add all this to about 4 cups cooked rice. Top with 1/4-1/3 cup soy sauce. Mix all together and serve. You can use ham, bacon or more eggs. You can also add more vegetables or omit some of the vegetables.
