APPLE PANCAKE 
1 1/2 c. apples, thinly sliced
1/4 c. butter, melted
1/2 c. sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg

BATTER:

1 c. pancake mix
1/4 tsp. nutmeg
1 tsp. vanilla
1/2 tsp. cinnamon
3/4 c. water

TOPPING:

1 tbsp. sugar
1/4 tsp. cinnamon

In a microwave-safe bowl, combine butter, apple, sugar, cinnamon and nutmeg. Cover and cook in microwave on high power for 3 to 4 minutes or until apples are tender.

In medium bowl, combine all batter ingredients and pour over cooked apple mixture.

In small bowl, mix topping ingredients and sprinkle over batter. Cook in microwave on high power for 4 minutes or toothpick inserted comes out clean. Let stand 5 minutes. Cut into wedges and serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
