CHEESY GARDEN CASSEROLE 
2 c. cooked brown rice
2 c. broccoli (cut in 1/2 inch pieces)
2 carrots (cut into strips)
1 zucchini (sliced)
1 c. cut green beans
1 (16 oz.) jar marinara or spaghetti sauce
4 oz. shredded Longhorn cheese
4 oz. shredded Monterey Jack cheese

Spread cooked rice in the bottom of a baking dish. Cook vegetables in boiling salted water until just tender (about 5 minutes). Drain. Spoon vegetables over rice and top with sauce.

Cover and bake at 375 degrees for 30 minutes. Combine cheeses and sprinkle over casserole. Return to oven just long enough to melt cheese.
