WHEAT GERM BATTER BREAD | |
2 3/4 c. all-purpose flour 2 packets active dry yeast (or 2 cakes compressed yeast) 1/2 c. wheat germ 1 1/2 tsp. salt 1 c. warm water 1/4 c. molasses 2 tbsp. shortening 1 egg No kneading necessary! In a large mixer bowl combine 1 1/2 cups flour, yeast, wheat germ and salt; mix well. Add water, molasses, shortening and egg. Blend at low speed until moistened; beat 3 minutes at medium speed. By hand, gradually stir in remaining flour to make a stiff batter. Cover; let rise until light and doubled, about 1 hour. Stir down batter. Spoon into greased 9 x 5 inch loaf pan or 1 quart casserole. Cover; let rise in warm place until light, about 45 minutes. Bake at 350 degrees for 35 to 40 minutes until deep golden brown. Remove from pan. Brush with butter. Cool. Delicious toasted. |
