CARROTS IN CINNAMON SAUCE | |
Cooking time: 10 minutes. Serves 4 1 lb. sm. whole carrots 1 tbsp. long grated coconut 2 tbsp. light brown sugar 1/2 tsp. cinnamon 1 tbsp. soy sauce 1 tbsp. lemon juice Place in small saucepan. Sprinkle on all ingredients. Add enough boiling water to barely cover; simmer for 7 to 8 minutes. Remove carrots with slotted spoon and keep warm. Boil the sauce 2 minutes. Pour sauce over carrots. |
