ITALIAN TOMATOES AND RED ONIONS | |
2 lbs. fresh tomatoes 1 lb. red onions 1/3 c. sugar 1/2 c. wine vinegar 1/2 c. olive oil 1 tsp. salt 2 tbsp. sweet basil 2 tsp. oregano 2 tsp. minced garlic Cut tomatoes into 1/4 inch wedges; slice onions 1/4 inch thick. Mix well and allow to sit at room temperature for at least 30 minutes. Add all other ingredients and toss gently in a large bowl until all tomatoes and onions have been covered with dressing and will marinate evenly. Let stand at room temperature for at least one hour. Approximately 15 (4 oz.) servings. Note: Marinade can be kept in refrigerator for future use. |
