CALICO RICE | |
3 c. boiling water 1 1/2 c. rice 1 tbsp. chicken stock base 1 tbsp. butter 1 pkg. long grain wild rice 4 chicken flavored bouillon cubes 1 c. wild rice 1 red/yellow pepper, chopped 1 green pepper, chopped 1 onion, chopped In boiling water add chicken stock base, butter and rice. Stir, cover, simmer 20 to 25 minutes. Fluff well. Place in large casserole. Cook package long grain wild rice as per package directions. Cook wild rice, place in colander, rinse well. Place long grain wild rice and wild rice in casserole; mix well. Saute pepper and onions lightly. Place in casserole. Mix well. Can be done day ahead. Refrigerate overnight. To serve, return to room temperature. Microwave on high for 5 to 7 minutes to reheat. |
